Hi, I’m Kara, I’m 19, and I’m from Merseyside. I was diagnosed with hEDS last August, just a few weeks after my 19th birthday, I also have PoTS, CFS/ME and fibromyalgia and I’m under investigation for gastroparesis. I first became severely symptomatic at 15 years old and had to give up a lot of the hobbies I’d enjoyed doing growing up, but baking was one of the only things I could still do, so I have made a lot of cake since then and was so excited when I heard there was going to be an EDS UK baking competition!
On my really good days I can bake like I used to, but on my more normal days I use joint braces to stabilise myself if I have to stand up, I will always decorate cakes sitting down and I’ll bake in sections (this cake was baked over 3 days) to give my body time to rest. Outside of baking I ride horses, I’m studying for a Master’s degree in Medicinal and Biological Chemistry, and my family just got a new puppy called Finn who has very quickly become my sous chef whilst in the kitchen.
This was a masterpiece – the zebra sponge inside was perfection! And of course who could resist the EDS UK sprinkles on the top of it – a fabulous looking cake
